Easy Chicken Quesadillas

A quesadilla is a traditional Mexican meal dating back to the 16th century. Back then, they were made with a corn tortilla toasted on a griddle, stuffed with cheese and other contents (meat, veggies), and folded over to be eaten by hand. Toppings such as guacamole, salsa, and sour cream appear to have been added later.

Essentially, it is a heated tortilla with melted cheese inside. Aside from cheese, a quesadilla can be filled with almost anything. Check out our own twist on this recipe with chicken and delicious veggies, all prepared and cooked in the woods.

Ingredients 

  • Flour 300 g
  • Cornstarch  50g
  • Chicken breast - 500g 
  • Red pepper x 2  
  • Green Pepper x 2 
  • Mozzarella 150 g
  • Cheddar 150 g 
  • Jalapenos 
  • Green bean
  • Some green 
  • Tomatoes x 2 
  • Red onion x 2 
  • Chips (Taste of your choice)
  • Oil 500g 
  • Salt
  • Avocado
  • liquid cream
  • Turmeric

Instructions 

  1. In a bowl, add the Flour + the Cornstarch + 2 spoons of salt + 2 spoons of turmeric and mix for 1min
  2. Add 30ml of sunflower oil and mix for 1 min
  3. Add 60ml of lukewarm water and mix - you want your dough to become homogeneous
  4. Add more water and mix until the dough becomes homogeneous and start to knead the dough with your hands to make a ball 
  5. Let the dough rest for 1 hour, put it in a bowl and close the top with a towel to let the dough rest
  6. Start to cut your ingredients in small slices - Red & green peppers + red onion + tomatoes + greens - and add some salt and pepper (you can also add lemon) and mix
  7. After 1 hour, go back to your dough, cut the dough in 4/6 pieces
  8. Take your pieces, and start to make little balls with them on some flour (not too much)
  9. Spread out your balls (2min) until they become thin
  10. Place the tortillas in a hot pan (1min each) - then take them out and let them rest
  11. Start to prepare the chicken breast - and add some oil + salt + pepper on it
  12. Add oil in a pan and put in on the fire
  13. Add your chicken in the pan, until the 2 sides became brown/gold then take them off

Assemble the tortillas:

  1. Spread the ingredients on the tortilla
  2. Add some Jalapenos and green beans
  3. Add your chicken (that you cut in slices)
  4. Add some avocado
  5. Add some minced mozzarella and cheddar
  6. Repeat this process 2 times to have 3 tortillas superimposed and finish by an empty tortilla
  7. Put the “Tortilla Cake” in a pan for ¾ min - Fire shouldn’t be too strong

Prepare the sauce:

  1. Place a pan on low fire, add 100ml of liquid cream
  2. Then add 100g of minced mozzarella + 100g of minced cheddar 
  3. Wait for the cheese to melt, then start to mix 
  4. When the sauce is liquid, take it out, add some chips on the top of the “Tortilla cake” and add the sauce on it.
