Easy Bossam Recipe

If you've ever wanted to attempt this traditional Korean dish, now is the moment because our mysterious chef has provided you with an easy recipe. This recipe uses pork that is incredibly delicate and flavorful, wrapped in crispy crinkled Lollo Rossa.

Ingredients

  • 1 Pork Belly
  • 8 cups water
  • 1 tsp Salt
  • 1 Galangal, chopped
  • 1 chili pepper, chopped
  • 1/2 Leek, chopped
  • 1tsp lemongrass, chopped
  • 2 leaves Kaffir Lime
  • 2 tbsp. Rice vinegar
  • 2 Garlic, smashed
  • 1 Mango, sliced
  • 1 cup Rice, boiled
  • 2 tsp Soya sauce
  • 5 big leaves Lollo Rossa

Sauce

  • 2 tbsp. Kim-chi sauce
  • 2 tbsp. Fish Sauce
  • 1 tbsp. Honey
  • ½ cup Sesame seeds
  • 1 tbsp. Miso paste
  • ½ Leek

 

Instructions 

  1. Prick the surface of the meat with a fork
  2. In a pot, add water, salt and  boil over medium high heat, and boil the meat until it's cooked
  3. While boiling add smashed garlic, chopped leek, galangal, chili, lemongrass and kaffir limes. Add rice vinegar while boiling.
  4. Once the meat is cooked, let it cool down and remove from the pot.
  5. Thinly slice the meat and spread soy sauce on it
  6. In a bowl, mix the sauce ingredients
  7. Place the meat on a leaf of Lollo Rossa, add the sauce and mango slices
  8. Wrap the leaf into a small pouch and eat it whole
